1. When is the hen to "old" to mate?

2. Is it possible to have a waiting time between introducing the birds and when they will begin mating (if they are going to)? If so, how long might this time be?

3. Is it possible for a male to be "too young" for a female who is "older"?

It varies between hens. You will usually see a decrease in eggs, egg viablity, or even no eggs. My old girl quit laying eggs at about 10 years old.
Yes it is possible to have a waiting time, and again it varies between birds. I have had birds start mating the second day and other pairs wait a week or so.
