OK WHAT are tijuana torpedos and how do you make them? I can't believe you had tamales at Thanksgiving- that's too funny. I guess most people have turkey- except vegetarians- wonder what they have?
I, too, LOVE hot foods! I wonder if hot and spicy foods are more popular over there than over here! Texas Pete and Tabasco are for babies Wink
I actually saw that Oprah with the mac and cheese! We have Oprah on at 4 and 9pm so I actually get to see it when I work a full day! I agree her mac and cheese looked great.

Patti LaBelle's Over the Rainbow Macaroni and Cheese

1 Tbsp vegetable oil
1 pound elbow macaroni
8 Tbsp (1 stick) plus 1 Tbsp butter
1/2 cup (2 ounces) shredded Muenster cheese
1/2 cup (2 ounces) shredded mild Cheddar cheese
1/2 cup (2 ounces) shredded sharp cheddar cheese
1/2 cup (2 ounces) shredded Monterey Jack cheese
2 cups half & half
1 cup (8 ounces) Velveeta, cut into small cubes
2 large eggs, lightly beaten
1/4 tsp. salt
1.8 tsp. black pepper, freshly ground

Preheat oven to 350:. Lightly butter a deep 2 1/2 quart casserole.
Bring a large pot of water to a boil over high heat, add the oil then the elbow
macaroni and cook until macaroni is just tender (about 7 minutes). Do not
overcook. Drain well and return to the pot.
In a small saucepan, melt the 8 Tbsp of butter. Stir into the macaroni. In a
large bowl, mix the Muenster, mild and sharp Cheddar cheese and the Monterey
Jack cheese. To the macaroni, add the half & half, 1 1/2 cups of the shredded
cheeses, the cubed Velveeta and the eggs. Season with salt and pepper. Transfer
to the buttered casserole. Sprinkle with the remaining 1/2 cup of cheese and
dot with the remaining 1 Tbsp of butter.
Bake until it is bubbling around the edges, about 35 minutes. Serve hot.

Anyway, for holidays of course we have a turkey and ham- if both my mother's and father's side are with us then there is a TON of food for a TON of people. Hey, have you ever had grits?

Hey, yeah, maybe I should get her book.

I've had grits. I actually had them once when I visited Ga and they were so-so. Then I had them when I visited MS and they were great!! We went to this little out of the way restaurant in Gulfport (and I don't remember the name of it) and they only served breakfast there. It was the best breakfast I ever had.
Oh yes, I tried cheese grits once, but I don't think the guy made them right. I eat lots of cheese, but I didn't like those grits.

Okay tiajuana torpedos.
You take whole canned or fresh if you prefer, jalepenos. The bigger, the better. You cut them off the top so they stay whole and take the seeds out. Then you stuff them with a chunk of cheese (I use jack or ched) and then you dip them in the corn dog mix (you can make your own or I cheat and buy the box at the grocery store). Then you drop them in the deep fryer until they are golden brown. Viola!! Yummy!! You don't have to stuff them with cheese either and they are good that way too.
Sort of like making homemade corndogs, w/o the dogs. haha!! Great to add to any meal or just to eat by themselves. You like?

If you like hot foods, have you ever tried jalepeno fudge? (it's not sweet)

OK, I personally HATE grits and I've lived in Atlanta until last yr when I moved here (Charlotte). Everyone loves them and the few times I tried them I felt like I was eating creamy sand or something similar (gross)...UNTIL last Christmas my mother's friend made two casserole dishes FULL of grits...I was thinking NOBODY will eat these! Oh MY gosh they were THE best things I've ever put in my mouth! You'd like them I think- they definitely have some type of jalapeno cheese b/c I taste the jalapeno. She won't tell anyone how to make them though Frown
The tijuana torpedos sound different...but good. I've never seen corn dog mix over here...if I wasn't buying the mix how would I make it from scratch? I also don't have a deep fat fryer Frown Are those expensive? You must have quite a kitchen! They sound like something I'd really like...that reminds me of Jalapeno Poppers you can get in the grocery...ever had them?
Jalapeno fudge? Sounds weird...what's in it?
Speaking of FUDGE my grandmother makes THE best fudge in the whole world (I think). She makes the best everything in my opinion- and she makes it all from scratch. She's the best cook.
Let me see...is iced tea popular over there?

I'll have to find my recipe for the corn dog batter and post it hopefully tomorrow, okay.

The jalepeno fudge is easy, just take 3-4 (beaten) eggs, depending on how much you like eggs, add a pound of grated cheddar cheese and a couple of jalepenos (the more peppers, the hotter cuz they seem to heat up when they are baked.) Mix it all together and then put in a glass baking pan and cook at 325 for an hour. It comes out like fudge, you know, but very cheesy.

Sometimes you can get a deep fryer at the home shopping network online anywhere from about $49.99 and up. They have some on there I saw the other day that look cool (like emeril's on tv) for $99. It just depends on the one you like. You can just use a deep pot (heavy type is best) for deep frying too. If you don't use the deep pot, then oil splatters everywhere. Yuk!!

Yep, iced tea and cokes (or sodas) and lemonade. I drink coke more often than tea, but I used to drink only tea. Changed my bad habits, I think. lol What do you like to drink normally?

Those grit casseroles do sound good to me. I think if someone knows how to make grits properly, they are good. Maybe I'll have to try a box myself and see how they turn out. No one I know likes grits, so I'll be stuck eating them all by myself or else the dog will get them (if the dog will eat them. lol) Smile

Nope, my kitchen pretty much is lousy to me. I need more room and I have limited counter space. My husband has promised to build me a new one some day, but hey, I'm not holding my breath on that one. haha!! It would be nice though. I'd love to have one of those huge kitchens like you see on the extreme homes on tv or the ones they remodel. They all seem to be so large and spacious. I feel like a little sardine in mine. Wink

I haven't tried the jalapeno poppers yet. I got some kind of similar ones at a restaurant one day and they were Yuk!! The crust was lousy. I think it's the batter that makes the torpedos good.

Wow, I thought iced tea was a southern thing- oh well. What about ranch dressing- do you have that? My friend that went to Boston College said they didn't have ranch dressing up there and everytime she came back to atlanta she'd stock up on it. I dont THINK she was pulling my leg.
OK now about the jalapeno fudge...I might change the name b/c when I think of fudge I think of my grandmother's chocolate...so it might have to be jalapeno squares (or something similar) to me. I do think I might try that for our next food day at work.
Normally I drink straight vodka.
Just kidding- well I don't drink iced tea very often unless my aunt makes it (I'm not a picky eater but sometimes I'm picky about whose food I'll eat- are you like that?) I don't drink coffee and try not to drink sodas- I always have the worst withdrawal headaches from the caffeine. I do like lemonade though. I guess most of the time I drink water...boring, I know.

Hey, my kitchen is lousy, but I'm also renting an apartment. My parents had their kitchen redone (unfortunately for my dad my mother's best friend is their decorator Big Grin). They got all sorts of stuff I want (but don't need). One thing they have that has really come in handy is a warming drawer- it can either warm stuff up or keep things warm for long periods of time.
I don't have much counter space where I am either- which stinks and there's TWO plug outlets- no room for anything.
Oh the jalapeno poppers aren't that great so don't buy them- one of my college roommates used to eat them.
Do you have kids?
I'm sure if you came over here to a mexican restaurant you'd think it was crap.

My absolute favorite is fried beef liver with sauted green peppers and onions with creme potatoes, and green beans. I could eat my weight in it. Other favorites: grilled fish, shiska bobs with either beef or chicken, grilled vegetables with wild rice, italian green beans, grilled chicken salads, sloppy greasy bar-b-que chicken with potatoe salad and baked beans, gota go for now time to raid the frig....
