shredded cabbage mayonnaise Splenda and vinegar to taste crispy cooked bacon broken into 1/2" - 1" pieces
Mix cabbage, mayo, Splenda, & vinegar then toss in the bacon pieces. This tastes sooooo good! Sometimes i just lay a few slices of cooked bacon on a plate and put a scoop of slaw on top of it. This is so satisfying. Try it!
Jaylo, I got ambitious last night and made Mock Potato Salad, but I generally don't use a recipe. (You might say, I was very curious.)
You just steam a head of cauliflower about 8 mintues, so it's a little crunchy, but not too crunchy. I used half the head to make the potato salad, since I wasn't sure if I would like it. Then I just added all the regular ingredients for potato salad and it turned out really good. My husband even liked it (that's a rarity). You could use the Mock Potato Salad recipe from the low carb forum as well. It's pretty close to mine.
I read that forum quite often and I notice that people use cauliflower to subsitute for potatoes and rice a lot. If you like cauliflower, I'd say give all the recipes a try!
I made a great sauce to put on chicken or to use as a dipping sauce.
1/3 package of cream cheese softened 1/3 cup sour cream or french onion dip 1/3 cup bleu cheese or ranch dressing (I like blue cheese) 2 T. red hot sauce 1 T. chives or chopped cilantro
Mix all this together and use as a sauce on top of baked chicken or makes a great dip as well.
You can chop up a baked chicken breast and add to the sauce and then put into celery sticks or on crackers for a snack also.
My family and I went to dinner a few weeks back (to an upscale restaurant) and the meal my Aunt ordered came with smashed cauliflower. She asked about it and the waiter just said it's like mashed potatoes, but with cauliflower instead. She tried it and really liked it. It is becoming really popular.

I made the recipe for mock stuffed baked potatoes. I always improvise with what I have and it turned out really good.
I just steamed the cauliflower, about 8 minutes and then used half the head and put in some sour cream, cheddar cheese, butter, and covered it with foil and baked it at 350 for about 20-30 minutes. When I took it out, I topped it with bacon bits. It was just as good as a baked potato, so I didn't miss the potatoes for once. I'm a potato freak, but I have learned that it's not the end of the world if I don't have them. I just want them. LOL
Now, if they could just make a cauliflower potato chip.

Wow, that really sounds good Reporter! I am going to have to try that. Do you think it would work as well with frozen, bagged cauliflower? I have that in the freezer at home.
