Place the corned beef brrisket in a deep pot. Add beer and enough cold water to cover. Add pepporcorns, bay leaves, and thyme. Simmer beef over a low heat for 4 hours or longer until meat is very tender. During last 30 minutes of cooking time, add vegetables. Continue cooking until vegetables are done. I like my vegetables with a little crunch left to them in the center.
Did similar to this last night, but used shallots, cooking sherry and a bit of beef boullion instead of the beer, rosemary instead of thyme, and added crushed garlic, one clove, and a bay leaf :-) Yum.
